Kale and Avocado salad
* 1 head kale, shredded * 1 cup tomato, chopped * 1 avocado * 2 tablespoons grapeseed or olive oil * 1 tablespoon lemon juice * Celtic or Himalayan sea salt, to taste * ½ teaspoon cayenne In mixing bowl, toss all ingredients together. Mush everything together (with hands) to created marinated/wilted effect on kale. This makes it much tastier and easier to digest. I may have to try that. I've got a bunch of kale sitting in my fridge..we did kale & blueberry smoothies last week when we were sick. I'm really not a fan of raw kale so much. I made a kale & squash soup last year that was good.. This salad might make me like raw kale a little better though...I love avacado!

Yeah the video explains how raw kale is really stringy and tough but the salt and the oil and massaging make it almost "cook" and the entire texture changes.
I can't wait to try it! |
