Moses Baked Chicken 1 fryer chicken 16 oz fresh or frozen green peas 1 C carrots, quartered 1 large potato thinly sliced 3/4 C brown rice, uncooked 1 12 oz can cream of chicken soup and 1 equal can milk or water 3 T butter Boil and debone chicken. Spread uncooked rice on bottom of (covered) casserole dish. Follow with layer of sliced potato, spread bits of butter on ingredients in pan, and add layers of veggies and chicken. Use remaining butter and continue layers ingredients. In mixing bowl, combine soup and water/milk. Mix well and pour over ingredients in casserole. Bake 30 min at 350 in a covered casserole dish until potato and chicken are tender. |

FWIW, DH says the Chicken Naranjo
a) should be called Chicken Naranja b) needs some coriander I almost started trying to explain why your mother would disapprove, but thought better of it. But for anyone else trying the recipe, you might want to add some dried coriander...

We had "Chicken Hawaii" tonight. Everyone agreed that we had no idea what made it Hawaiian. It was more like "Vaguely Chinese-ish Chicken". I made it with BarefootBetsy's Rice recipe (Y. U. M.) Tonight's dinner was brought to me by GCM!
It was good but not good enough for all the prep. If I did it again, I would use boneless/skinless chicken breast or drumsticks or thighs...basicly something already cut up and ready to go. And heat the oiled pirex in the oven befor adding the chicken. Dh and dd loved it, I liked it and my picky boys took one bite and made a PB sandwich...which is what they do about half the time anyway. I felt like it lacked something. It needed some pizazz. I wonder what I could add to the marinade/sauce? |
