They do look good! I'm marking that site as I'm trying to convince dh to go meat free at least 3-4 nights a week. He needs good/real food replacements.

I think I'll make these too. I've been looking for a recipe like this. I've had something similar and it's so good! Needingto make some diet changes and this fits the bill!

I have a recipe for black bean sweet potato enchiladas that is similar and they are SO yummy!

Those look so yummy. I have a sweet potato burrito recipe that my husband makes and it's to DIE for. I seriously will eat them for snacks and every meal until they are gone.

Wonder if that sweet potato/black bean mixture would work as an empanada filling

. I think I'll give it a try tonight. The kids wanted empanadas, and they usually like theirs with just cheese, so I usually make dh's and mine with a variation on taco meat. But this sounds like it might work (and be a fair bit healthier

). We shall see...

So, do you think they'd still be as yummy if you omitted the cheese? Or would they just be kinda dry.

Oh, Mine will have no cheese...I didn't really think about it. I'll add salsa to help with moistness, probably.
