Wheat Berry Pancakes Very YUMMY
Ok these are not your traditional pancakes. However that being said my kids can't get enough of them. Well I found out about them at a farmers market and I looked all over for a recipie. I couldn't find one however I made one and it turned out so well I thought I would share.
1 cup Whole Wheat Berries (not ground) 11/4 cup Milk (I don't see why soy or rice milk wouldn't work as well) 1 egg 2 tbs brown sugar 2 teaspoons baking Powder First of all take the Whole Wheat Berries and Mix with Milk in a blender. Then Blend/Puree for 4 min. I timed it to make sure. Then I let the blender rest for a bit and added the egg, brown sugar and baking powder. After adding that I blended it for 1 min timed. Ok then I just poured on a hot griddle and waa laa Whole Wheat pancakes that are so good.

you can make the batter with wheat berries and something live...buttermilk, yogurt or the like...blend and let sit out overnight. in the am add the rest, blend and cook. yum!! the soaking really helps us digest the wheat.

These were yummy! I did 1 cup of milk and 1/4 cup of yogurt and blended them the first time the night before and kept it in my fridge (I also used soft white wheat berries). Then in the AM I added the other ingredients, plus a wee bit of salt, and cooked them up. They were nice and fluffy and the kids loved them. I want to try this with spelt grain next...
