Eating in shifts tonight, so I made some quinoa and boiled eggs in the IP (so glad I have learned how to do both at the same time, and it takes only a total 15 minutes from start to finish!) I roasted four pans of veggies
(carrots, brussels sprouts, cauliflower, broccoli, sweet potatoes, and a few red potatoes) and made some coconut/almond/sriracha sauce to go on top of the quinoa and veggies, (eggs on the side for protein). People can just heat up their own portion and eat it whenever they can.
I really hope there are leftovers, but from the looks at all the "picking" everyone did at the cooling veggies earlier, I doubt there will be.

Tomorrow is chicken enchilada casserole. I have found that no one cares if I make actual enchiladas anymore, so I never do that anymore. Just layer it all in a pan! So much easier!

Cookbook is “cook once, eat all week”. My favorite. I dont use her batch cooking methods very often, but we love all the recipes we have tried. Its all set up to grab three main ingredients and have three meals prepped.

Yesterday I made red beans and rice with cornbread and a veggie heavy salad. I ended up making more than I expected so had plenty of liftovers. So today was left overs day and I didn't have to cook anything.
We're eating super simple tomorrow. Ground beef with cream of mushroom soup over rice with steamed carrots as a side. I'll do groceries Wednesday.

Ugh. I am so sorry about your A/C! That happened to up years ago during July, and it was dreadful. I had to break down and get a window unit!

Anyway, put 1 cup quinoa with 1 1/4 cup water in the pot, then put in a 2-inch high trivet and put the eggs on the trivet. Set for 1 minute cook time, and then do 10 minutes pressure release. You can do a slightly longer pressure release if you like your eggs harder, but too long and the quinoa loses its bite.

I'm avoiding the oven too even with my A/C working. Our electric rates have doubled and I am trying to keep the A/C up to save money. I get it! Any ideas for cooking as minimally as possible to keep the heat low are appreciated!

So far, I've been sticking to stove-top dishes. I did egg noodles last night, but I don't think I'll do pasta again except in my IP because boiling water heats up the room a LOT!

I'm going to try that quinoa and eggs soon! That's one of the IP techniques I want to try.

I made sorghum earlier this morning for lunch salads. It should be a good sub for bulgher or quinoa in tabbouleh and there's a wheatberry salad posted in another thread that I wanted to try it with sorghum instead. We have an excess of cucumbers and zucchini in the garden and a small number of peas and beans that should be just right for those types of salads.

I made collard greens in the crockpot, a pork loin roast in an IP and polenta in the second IP for dinner tonight. I don't know if running all those appliances at once does much for the electric bill, but it didn't add too much heat to the kitchen. The toaster oven seemed to heat things up more this morning.

I made Taco Salad for lunch today. (dd working during dinner time and dh and I had a bike ride). It was so yummy, I used to make them long ago but have fallen off. .. . What other non traditional salads are out there?

I made zuchinni boats tonight with roasted asparagus snd eggplant on the side. They were good, but not worth the extra effort. I think I will make the same recipe and just chop up zuchinni and make it a one pot meal instead. Only DH and I eat it, and a stuffed pepper, properly.

twoplustwo, I ❤️ taco salad. I also like Greek salads. I am making buffalo chicken salad tomorrow if I can find decent lettuce.

Well today's plans were to use some leftover peanut butter sauce I used yesterday over some roasted apples we have for dessert for some peanut noodles today for lunch.. things got crazy and we ended up grabbing pizza out.
Big lunch so we just did salad and some chicken drumsticks in in air fryer for dinner.

So I still plan to do the noodles tomorrow for lunch probably have enough for a second days meal. Fajitas for dinner probably.
