Last night was prosciutto wrapped tilapia with caper sauce, lemon artichoke risotto, and Greek salad.
Tonight I'm planning gf biscuits and sausage gravy, cheesy hashbrowns, and raspberries.

Today starts the most vacationie part of our trip, for me at least, we are with mymom for a week, she knows are allergies and has planned meals. I won't have to think about good for a whole week!

I don't use a recipe. I've tried several and they were not much better than just winging it. Plus, I don't like a lot of extra "things" in my salad. I just shred the chicken, add celery, salt/pepper, or maybe even some seasoned salt, then maybe a fruit (either grapes, apple, or craisins, depending on what I have) , a small squeeze of dijon or lemon, then stir in some Duke's.

Tonight is leftovers night! I have a few servings of two different meals (shepherd's pie, chicken curry) and everyone can choose to warm up one of those or something simple like oatmeal or eggs.
Easiest prep ever.

I was going to try my new wok and make chicken stir fry, but I forgot to thaw the chicken, so I am making a one pot pasta dish with chicken sausage.

We got back from Texas this past Sunday. Margaret started her second set of ballet intensives on Monday.
This weeks dinners Monday- It's a blank I seriously can't remember what we had. Tuesday- Calabacita con Puerco (pork with squash) which was apparently really good because I made the dish had to go pick up Margaret from ballet (before I had the chance to eat ) and when I got back there was only a tiny bit of the tomato/corn squash mix. No meal etc.. I made omelets for Margaret and me. Wednesday- GF spaghetti noodles with lentil marinara sauce air fryer asparagus and garlic toast. Thursday - Chicken tacos Friday- Air fryer Salmon coconut rice and mango avocado salsa Saturday "leftover crockpot soup" (chicken and coleslaw mix from the tacos, some last bits of carrots and celery before getting more half of some previous used yellow and red onions.. I'll serve with crackers and cut what ever fruit we might have that probably will also need to be used. Sunday- To be decided...

Tonight I'm making Sheet-Pan Chicken with Roasted Spring Vegetables & Lemon Vinaigrette. Maybe I'll make some rice on the side for DS....he's not going to be in love with all the veggies but DH and I love it.

Dh is smoking a couple of pork tenderloins. He's trying out the bourbon-barbecue sauce in the current issue of Cook's Country.
For sides, I have broccoli, yellow squash, and cucumbers I need to use up and an unholy amount of zucchini from the garden. We're drowning in it already! If you have any favorite zucchini recipes, please send them my way! I've already made a double batch of double chocolate zucchini bread, and a chicken-zucchini salad (I omit the pecans - allergies - and use basil or parsley instead of mint). I'll make "noodles" and puree for the freezer soon and more zucchini bread. My kids like it oven-fried with panko or parmesan coating, so I'll have to make that soon.

If the zucchini are big, you can stuff them. We like sausage, bread crumbs, eggs and Parmesan cheese.
Last night was tacos. Tonight ds19 is playing soccer. Not sure yet if we are going to the game so, not sure what I’m doing about dinner. We’re also having 10 yards of gravel delivered this morning. Sent from my iPhone using Tapatalk

It is after 7:30 here and I still haven't made supper.
I have chicken stir fry on the menu, delayed from the other night. I don't know why I am having such a hard time preparing it. It is like I have some mental block or something. I might make fried rice instead.

I’ve added an easy crowd pleaser into my rotation that we had tonight.
In a baking pan, put a block of feta surrounded by two pints of cherry tomatoes and a chopped onion. Drizzle generously with avocado oil. Sprinkle with salt and pepper, maybe some red pepper flakes, maybe a few handfuls of spinach. Cover tightly and bake at 400 degrees for 40 minutes. Then comes the fun part...add the juice of one lemon, mash and combine, toss with pasta. Oh, and add a ladle of pasta water to the sauce before you drain it. Yum.
