That panzanella looks tasty! Definitely going on the list to try out.
I think we're just going to have burritos or tacos tonight. I need to go grocery shopping, and the kids requested tacos, which is an easy pantry meal.

Last night dd17 made honey mustard wings and cauliflower. From a book of sheet pan dinners. It was quite good. She did a great job.

Last night we had a vegetable heavy pasta salad.
Tonight is curried chicken and vegetables with rice.

I have been making meals but nothing outside of my usual list - tonight dh is cooking steaks since dd (vegetarian) won't be home.
Upcoming next 3 days. . . I have veggie stir fry, falafal rice bowls and chicken wings and hearty salads (dd wont eat the wings but ds specifically requested them) . . .one thing I have been making for quicky meals (though ds wont eat them) - is what I call iron bowls. I cook garlic, spinach and quinoa (the quinoa is already pre-cooked in the rice cooker) - super quick and healthier than convenience food. Quote:

Last night, we had Cod in Coconut Broth from Cook's Illustrated, which is essentially a Thai flavored poached fish dish. It's so delicious! Side were a cucumber salad, a cabbage salad, and coconut rice.

Just got home from an extended family reunion and I left with several dozen farm fresh eggs from my sister's chickens. So tonight was egg on english muffin sandwiches. With cheese and turkey.
