The homemade lasagna from the freezer and a huge salad. I think there's a little of DH's homemade bread and some garlic confit/oil left for those who need garlic bread to go with it.

My kids discovered an Olive Oil and Balsamic Vinegar store over the summer and we made several trips. Littlest eats salads all the time now if she can maker her own dressing and add "sprinkles" - a flax, brewers yeast, sesame seed, seasonings combo - that I keep in the fridge for salads. I was gone until dinner time and DH is out, so we had burgers and salads when I got home.

I made a favorite salad tonight that has, chopped in very tiny pieces, broccoli, red cabbage, carrots, red bell pepper, cucumber, pickle, onion, and garlic. Then you pour a bunch of pickle juice on it. I admit it sounds horrible but it is so good- and for some reason it is super filling as well. Ds1 made noodles and yum sauce to go with it.
Now I am working on a roasted tomato basil soup even though we already ate dinner- I just need to use up tomatoes. Friday is use up all the veggies night because I like to start over with produce when I shop on Saturdays. I’m going to check on the peaches on our tree in a minute. If they are ripe I will make a cobblerisp (peach cobbler with peach crisp topping on top).

My blood sugars decided to go to poop tonight so I was in no condition to be cooking. DH took my oldest to burger king, Margaret had ballet all evening I'd bought her an early dinner after school and I eventually ate a bowl of oatmeal. I'm feeling pretty good now though.

Grilled eggplant and onions fresh from the garden as well. With oven roasted potatoes on the side. (Also fresh from the garden!)

My mom bought us hamburgers to celebrate my brother's birthday. She'd just been to the cemetary to visit his headstone. We went to a restaurant he would have loved.
