Cold Bean Salads?
Anyone have a bean-based salad they love? Vegetarian

This one is super popular every time I make it!
2 cans Black Eyed peas 1/2 red onion chopped 3-4 sticks celery chopped (optional green or spicy pepper, chopped) 2 T olive oil 2 T vinegar (I prefer apple cider vinegar) oregano salt and pepper I don't measure anything, so I probably add more EVOO and ACV, but 2 T would be a good place to start. Fresh basil is also delicious in it.

My favorite-
1 can black beans 2 small or one large tomato 1 large avocado 1 c. frozen corn, thawed 1/4 c. Italian dressing (optional- I know it sounds weird but it's not) some chopped fresh cilantro splash of lime juice Eat it with a fork or eat it with chips. It's loved by omnivores as well!

Super easy, and everyone loves it.
Can black beans diced pepper (orange, yellow, red - green is a bit too harsh) Tbsp of olive oil tbsp or so of balsamic tsp of cumin That's it. Even not veggie lovers like this when I bring it places. |
