My Kitchen is Overflowing with Grocery Store Rotisserie Chicken
People have been thoughtful and generous to want to bless us with dinner since we have had the baby two weeks ago. It is sweet, but people keep bringing us grocery store rotisserie chicken. We got chickens number five and six today.
It has to be reheated anyway, and chicken number four is still in the refrigerator from yesterday. How long do you think it stays fresh/safe to eat? What can I do with it so we don't have to eat it straight up, but that is not labor intensive?

If it's not too labour intensive, I love having precooked shredded chicken in the freezer to pull out whenever I want it - soups, quesadillas, curries, etc. It's such a time saver for me. I'd just toss the skin and bones, and put the shredded meat into a ziplock freezer bag to use later.

Yep, we received rotisserie chickens (and baked chickens too) after the birth of youngest son. I had a post-partum doula that came to help some, so I asked her to shred the chicken for me. Previous commenter asked about your oldest doing that (good idea).
From there, I could easily mix up enchiladas (I used canned soups and pre-grated cheese as I just wanted my family fed). I think we did a chicken rice and broccoli casserole too. Frozen broccoli or other frozen vegetables (or canned if that is your preference) work well for this. It's a pretty easy meal to throw in a pan or the crock pot. As far as staying fresh, I think they are fine for 3-5 days or so. (again) on your new blessing!

If picking the meat off is too much of a job right now, take your chicken shears (or carefully with a large knife) and cut it into quarters and freeze it as is. Later, take out a package, put it a casserole dish, season with whatever you like, and reheat it. I've done a number of "sauces" for chicken like that. Everything from a raspberry-chili sauce to a garlic-herb cream sauce to just olive oil, black pepper and sea salt.

I love shredded rotisserie chicken in tacos. Freezing it is a great idea, I never would've thought of that! I was actually just looking up a few days ago how long a rotisserie chicken is good in the fridge, and most places said about 3 days, 4 at the outside.

I was also going to suggest freezing the meat, but I see a lot of people already did. When I roast a chicken, we pick the meat off and eat it in corn tortillas with avocado (tacos, but real Mexican style ). You could add cilantro too or a little salt.
Is it okay that I laughed a little at chickens number five and six?

If you have a stand mixer, once it's picked off the bone, you can shred it instantly using the paddle attachment.

I use it for soups (chicken tortilla-YUM), shred and use in chicken casseroles, tacos, chicken sandwiches, Chicken alfredo, chicken and rice, and I second (third, fourth, fifth ) taking it off the bones and freezing.
