Favorite healthier freezer meal?
I am going to take a freezer meal to a friend who is undergoing a mastectomy? It needs to feed around 9 people. They normally eat pretty healthy. I never have any luck with frozen meals. Something I can put in a casserole, attach directions and it be really easy. I know they love Mexican food.

I might because her dh loves enchiladas . I might do black bean chili because I do that well.

I make something I call "Taco Pasta" - which is basically ziti but you substitute salsa for the tomato sauce. For the non-veg crowd, I mix ground beef, usually those tri-colored pasta ruffles, a jar of salsa, Mexican-blend cheese and, if I have it on hand, I'll chop some veggies into it (peppers, tomatoes, onions, sometime zucchini). Top with shredded cheese (if you want) and bake until it's all melted.

I freeze taco soup, curries (Thai or Indian), lentil soup, enchiladas, and burritos.
I do not freeze noodles, potatoes, or rice. IME there are texture problems when they thaw. So I will freeze something that goes with rice, but just cook the rice fresh to go with it.

These enchiladas are wonderful, and freeze well. Happygrl posted the recipe years ago on the once a month cooking thread (or something like that). Her recipe was identical, except she used two jalapeņos instead of the pickled jalapeņos, and for the cheese, 1 cup of sharp white cheddar and 1 cup of monterey jack. I usually cook use leftover chicken and cook it separate from the sauce and just add it in at the end. I also use flour tortillas instead of corn. My kids love this recipe.
