Dairy Substitutes in Recipes
1. Soy milk, rice milk, nut milk, or water (in some recipes) can be used in place of dairy milk.
2. Buttermilk can be replaced with soured soy or rice milk. To make soured milk add 1 tablespoon of vinegar or 1 tablespoon of lemon juice to 1 cup soy milk (or rice milk). Allow the soured milk to stand for ten minutes before adding to recipes. 3. Soy cheese can be found in health food stores. (Be aware that many soy cheeses contain casein, which is a dairy product.) 4. Crumbled tofu can be substituted for cottage cheese or ricotta cheese in lasagna and similar dishes. 5. Tofutti nondairy sour cream is yummy. You can also make sour cream using tofu: Tofu Sour Cream 1/2 lb. Tofu, patted dry 3 tablespoons vegetable oil 1 teaspoon maple syrup or agave nectar Juice of 1 lemon 1/2 teaspoon salt, or to taste Mix ingredients in a blender or food processor until smooth. 6. Tofutti nondairy cream cheese is available in some supermarkets and kosher stores. I'm going to try to make sour cream out of Tofu. My husband has been really wanting a certain dish but it includes sour cream. I've been refusing to make it because the kids can't eat it but now I will try since I finally "get" how to make the sour cream part!

SOY and DAIRY free alfredo and ricotta
the "recipes" may not be exactly accurate as I have been making these so long I never measure any more For "alfredo" sauce soak raw cashews is water for a few hours- I usually did about 3/4 cup in a pyrex cup with enough water to cover. cook pasta but reserve water drain cashews process together, cashews, 1 cup pasta water, 2-3 TB nutritional yeast, garlic (depends how garlicy you like it) a few TB Earth Balance (they make soy free!) Mix until smooth and thick- add more water to get the consistency you like "Ricotta" soak 3/4 c raw pine nuts overnight in a pyrex (1) cup with water to the top. in morning process the nuts, water, 1 garlic clove (more if you like), 2 TB nutritional yeast, 1 tsp salt until pasty a a ricotta consistency. Use in lasagna or baked ziti! enjoy! |
