I did the cheesy crockpot chicken from this thread. Added corn and beans and we had it like nachos. Super good and simple!
Tonight will be a chicken, rice and broccoli hotdish. You mix rice and minced broccoli with butter, then layer shredded chicken on top with BBQ sauce. Bake til crispy. |

Yesterday we had Crispy Italian Chicken and Bacon Salad with Tahini Pesto Dressing and Sourdough Croutons. Lots of work but delicious!

We had IP roast-y meat again. I cooked a 2.5 pound tenderloin roast on a rack over broth to which had been added a little espresso vinegar, Herbs de Provence, garlic, onion, salt, and pepper. It was awesome!
This time we ate it with steamed broccoli and mashed potatoes.

I miss cooking!

I am making red beans and rice in the crock pot tonight. Well, beans in crock pot, rice on stove. I am halving the recipe because we never eat it all, but I am nervous it will be too small for the pot.

Such good ideas in here! We're sometimes awful with ensuring we make a real dinner lately. Lots going on after work!
But tonight, it's chicken stew made with leftovers from last night's Costco chicken, crockpot roasted red potatoes, and green beans. We're trying to work on getting better at having good dinners for everyone even when we're running around a lot.

Chicken enchilada casserole (made with canned sauce tonight...no one liked it as well as homemade, but it was ok) Spanish style rice (also not homemade) and sautéed veggies.
