mommylove Rose Garden Join Date: Feb 2007 Posts: 9,120	ISO: vegan stuffing ideas for raw mini peppers I'm looking for really good recipes for stuffing mini peppers. I bought a whole bag at Costco for a make ahead grab & go snack. I need ideas of what to stuff them with. I'm envisioning a very thick spread to stuff inside that won't leak out when travelling. (so nothing like hummus) I'm thinking a nut-based , cream cheese-type spread that's really versatile depending on what's added (curry; sun dried tomato & basil or Kalamata; etc.) so I can mix it up and not get bored. There are a ton of recipes like this online, so I think I'm ok there. I'd like other ideas of what to stuff them with. Honestly, I'd prefer to not have nuts, but I'm doubtful I can achieve the texture & stick-togetherness I'm after without them.
