Default Who has Eggplant recipes?

We're going to try eggplant. So how do you cook/season it? And what goes well with it?

Romanians eat an eggplant salad that is really good and we've made it with veganese too. I can try and explain it to you (it is pretty simple) or try and google a recipe online to link to you.

WOW that sounds great!!!!!! Do you think I could sub cottage cheese instead of ricotta? My dh hates ricotta.

There are a variety of ways to make the Romanian eggplant salad but I think I finally found a recipe online that is close to the way we make ours

a few variations on the recipe:

We usually use about 3 large eggplants instead of 5

dh bakes it in the Oven at about 350 until the skin can peel off easily and it's soft on the inside... make sure to poke a hole in the eggplant first as we have had one explode on us and that is NOT fun to clean

Instead of chopping the eggplant by hand you can use a food precessor

We typically use eggplant, little bit of olive oil, salt, mayo (can be subbed with veganese) and onions but a Romanian family I lived with also used the garlic and both recipies are very yummy. Some recipes I found also use tomatoes.

Usually Romanians use this as a spread on bread, but it is also good with Tortilla chips as a dip.

That recipe actually appeals to me more, so that is the one I will try with eggplant. I was thinking of maybe putting it on bruchetta type bread. Anyway I'll let you know how it turns out! I won't be buying any until the 5th though, but I'll revive this thread then.

We discovered that we really liked it this way:

Cube eggplant, quarter a few tomatoes, and peppers. Drizzle olive oil and season with salt, pepper, basil, garlic, etc. Roast in the oven for about 35-45 minutes. Let cool and then put it all in the food processor and whirl it. Heat through in a pot and adjust seasonings. It makes an amazingly good pasta sauce, thick and consistent! Top your warm pasta with this and cheese if you like.

We also really liked it sauteed with soy sauce, garlic, ginger, and chili sauce over steamed rice. It needs to cook down a while to get it to the right consistency. About 30 minutes or so... This also freezes well and can be easily reheated in a skillet.
