we had a yummy, yummy, YUMMY veggie dinner tonight

....a recipe from body & soul magazine. i'll be jumping back on in the a.m. to share it.

Asparagus with akes, Shallots and Peas

Serves 6. Total prep/cook time- 25 minutes.
Serve either warm or at room temperature.

2 Tbsp olive oil
5 shallots, halved and thinly sliced lengthwise
8 oz. ake mushrooms, stems removed
coarse salt and ground pepper
1 1/2 tsp grated lemon zest
1 1/2 tsp chopped fresh tarragon
2 bunches of medium thick asparagus (2 lbs), tough ends removed, cut on diagonal into 2" lengths
1 cup frozen peas
2 tsp fresh lemon juice

Heat oil in a large lidded skillet, over medium heat.
Add shallots and cook until they begin to color. (about 3 mins.)
Add mushrooms, season with salt and pepper.
Cook for 3-5 minutes, tossing occasionally, until shallots and mushrooms are tender.
Transfer to a bowl. Add lemon zest and chopped tarragon. Toss to combine.
In the same skillet bring 2" of water to a boil.
Add asparagus, season with salt, and cook 3-4 mins. until asparagus is bright green and tender.
Add peas to skillet, and then drai.
Add asparagus and peas to the bowl with the shallots and mushrooms.
Add lemon juice, toss to combine.
Serve it up!!!
