Oh yes. It is a one pot meal. It is one of only 2 recipes we all like. I usually double it and use 8oz of cream cheese. I use fettuccini instead of pene. I also add the spice mixture as I am browing the chicken so as not to dirty another bowl. It also reheats nicely. It would be easy to play around with the protein too.

We ended up just picking up a restaurant Ive been wanting to try (Naf Naf - totally not impressed. Our local place is much MUCH better) after social distance baby shower for teacher at work and then p/u ds from school (not letting him ride the bus while #s are bad) and THEN getting a new toaster (shooting sparks). So last nights dinner will be tonight.

I had a gig (!) last night, so I was gone for homemade pizza night.(Dh made the pizza.) I got leftovers, though and even cold it was super yummy! My pizza had garlic confit, goat cheese, and olives on it.
Tonight I made Butternut Squash soup, popovers, and a side of bacon.

Enchilada potatoes. Basically extra enchilada instead on top of baked potatoes. I needed to bake some potatoes for tomorrow's pot pies.

Supposed to be pot pies but I have a LEEP procedure after work today so not sure on timing as both dc have soccer. Maybe leftovers plus frozen (not really enough leftovers for 4) and pot pies tomorrow.

Homemade pizza. I work on Tuesdays and am mentally exhausted by the time I get home at 6. It's fast, it's easy and I look like a hero, offering up pizza mid-week. Which reminds me, I need to restock a few pre-made crusts as this finished up my stash.
