Because I am still swimming in deliciously ripe homegrown tomatoes, tonight's dinner was another batch of homemade pasta sauce. I failed to take photographic evidence.
Yesterday's meal was a chicken stir fry with spinach, served over zucchini noodles (rice for the kids) and grilled asparagus. Of that I DO have evidence.

Eating Fantastically in August!
Kids bought me a new frying pan for my birthday. I wanted a bluestone one to make crepes with. Haven't made them in years. It's dd's 7th birthday so we had Banana and coconut pancakes with a drizzle of golden syrup for breakfast. Success. Amazing pan! Sent from my iPad using Tapatalk

I didn't get a picture but last night I made chicken soup with rice in my preshercooker. Early bird had been sick, not eating and requested it at 4:30. It was wonderful and I spent twice as long cutting up onion and chicken than it did cooking.

We're fairly well organized this week. Monday was roasted chicken, pasta with peas and broccoli. Last night was tacos. Tonight is curry with the leftover chicken and rice. Tomorrow is short ribs with mashed potatoes. I've even already got the ribs thawing!

I'm trying to work up the motivation to make tomato pie. We haven't had one yet this summer and my people would be so, so thrilled. Ugh it's so much work and mess though...but SO DELICIOUS

We had Spicy California Shrimp Stacks and Oriental Broccoli Ramen Slaw Salad.
My family LOVES and begs for the shrimp stacks, with the exception of DS. When he saw that I was making them, he was seriously devastated . He's a bit picky, so when he doesn't like something, I usually put the ingredients on his plate separately, and he unhappily makes due with what's in front of him. Tonight after looking at his plate, I had an idea! I told him to put the brown rice, shrimp, and cucumbers in a skillet. He sautéed them (himself!) in olive oil and garlic, and he LOVED it! He was so proud of himself AND he thought it was delicious! WIN!

Those Shrimp Stacks look really good! (I'm glad you shared her blog...I like the way she sorts her recipes into special diets.)
Last night I tried my own creation of veggie lasagne, with long thin slices of zucchini and eggplant instead of noodles. So I layered those with heaps of fresh spinach, meat sauce, and a little shredded manchego (my dairy allergic child can have sheep cheese, but daiya would be good, too) and baked for 30 min at 350.The cooking veggies thinned the sauce a little as you can see in the pic, but it was really good. 4/5 of us liked it, and the other one made herself peanut butter toast after tasting it bravely. Next time I'll shred some zucchini into the sauce for her and cook her a little gf pasta. I could have made a salad to go with it, but I felt like we were getting plenty of veggies and it was actually quite filling. Tonight I'll bread chicken with Hodgson Mills' GF breading mix and pan fry it, along with roasted broccoli and rice. ETA: I was just looking around Skinny Taste, and she has a zucchini lasagne! She pre grills the lasagne and then lays it on paper towels so it doesn't make the dish watery. Hers looks better with the zucchini on top with cheese...http://www.skinnytaste.com/zucchini-lasagna/

I tried a whole chicken in the instant pot tonight for the first time. Crazy because it was only 35 minutes cooking time, which is insane quick for a whole chicken. But it was definitely fall off the bone done, without being overdone.
It was very good. I still miss the roasted crispy chicken skin that the oven roasting gives you, but until it's cold outside there is no way I'm turning on my oven for hours at a time. Tho.... now that I ponder it.... I wonder if I could instant pot the chicken, then transfer it to a baking dish, add some oil on the skin and put it under the broiler for just a few minutes to crisp up. Brilliant. We grilled out yesterday. Beautiful weather for it!
Brats, chicken breast, tons of grilled veggies. Made a fruit salad with a fruit dip for dessert.

We are back from a road trip. Successfully catered food for the road we didn't have to stop to eat. Here's a pic of my stash of fruit and vegetables and dips that I had for our journey to Victoria.

Since we have totally revamped our diet to almost solely whole foods, we have also moved to packing all our own food for road trips and vacations rather than eating out. It's a learned skill and takes some practice but once you master it it's actually really easy! Looks like you've got it perfected!
I love how much TIME and MONEY it saves on the road. I obviously knew how much money it would save, but the time savings alone is AMAZING! Not having to stop at restaurants on those long trips makes them so much more doable!
