Use canned. It tastes much better. We have tried home cooked and it doesn't work.
Last time we had no pickles. We used jalapeno olives instead and it was yummy and turned it slightly pink

We did a can of chickpeas, mayo, pickles, and some spicy mustard and it was SO good.

If you have dijon veganaise will it work for both or do I have to have both seperate just wondering since I thought about making it soon( I got chickpeas yesterday) another question can I use relish instead of pickles? Thanks to all who can answer.
