An attempt at a Peanut Butter and Jelly Oatmeal Pancake recipe using gluten-free flours (because we're GF), replacing the milk with kefir (because we're out of milk), and replacing the egg with flax seed meal paste (because I forgot to grab eggs when I was at the farm this morning and my pregnant body doesn't feel like expending the energy to walk 3/4-mile round trip just to get two eggs).
...wish me luck. ETA: If necessity is the mother of invention, does that make Google the workaholic father? The pantry's a bit bare but I've been avoiding grocery shopping 'til dh's next paycheck since we had some unexpected car issues that still aren't resolved, so suffice to say I've been Googling recipe ingredients based on what I have... as well as substitutions. Hehe. Before today, I had no idea you could substitute flax seed meal and water for eggs. Pardon the typos - this was sent via Tapatalk on my cell phone!

Lunch was loaded mashed potatoes - cheese, leftover roast, sour cream, heavy on the veggies (broccoli/cauliflower for the boys and me, green beans for DH)
Dunno supper... I made two TexMex-ish meals yesterday Recipes on my health blog (link in sig).

I think dh is making Tumeric chicken and veggies (carrots, onions) and sauteed asparagus. Ds is loving asparagus (watch him make a lier of me though).

- iceberg lettuce - cucumber - dried pear - green grapes - green pepper - pecan granola - poppyseed dressing Served with cold leftover steak strips.

Tonight will be some version of cabbage potato soup. I just got two heads of cabbage from my CSA, so I will need to be creative to use it up this week.

We are having dinner tonight with a friend. I'm bringing sandwich fixings, guacomole and chips and fruit salad. I think she's making potato salad, raw veggie plate and cookies. It's going to be a feast.
