It's basically haystacks on cornbread instead of rice. (though I'd leave the mayo out, too...)

Southern-Style Creamed Chicken
1/2 C chopped onion
3 T butter

2 T flour
dash of cayenne
1.5 C shredded sharp cheddar cheese
1/4 C mayo
1.5 C chopped cooked chicken
10 oz pkg frozen peas
4 hard cooked eggs, sliced
1 jar mushrooms
1 package cornbread

Saute onion in butter. Blend in flour and seasonings. Gradually add milk, cook, stirring constantly until thickened. Add cheese and stir til melted. Blend with mayo, adding chicken, peas, eggs, and mushrooms. Heat thoroughly and serve over hot cornbread.

I don't even know how to process this.
does your Mother know my MIL? Take out the Onions and the Peas and the cornbread and add some pasta (doesn't matter what kind...even if it's 3 different types it all eats the same!) and you have one of her signature recipes. And apparently the best part is it's SO versatile you can serve it over toast, or with rice, or add some extra milk and have a nice soup.

ETA This is the same woman who once served me a "tuna casserole" consisting on white rice, tomato sauce, canned tuna mixed together and then topped with slices of american cheese.

The egg and pea dish seems like a casserole version of the seven layer salad that used to be popular.

My husband fell in love with a sad sad sad chicken casserole at church. The cooks directions are
boil chicken
boil spaghetti noodles in the chicken water
strip meat off carcass and chop
add cream of mushroom soup, cream of chicken soup, block of velveeta
stir it all together till creamy add milk as necessary, top with breadcrumbs and bake.

My husband LOVED it. I'm gluten free so I couldn't touch it :P
