Someone brought us a freezer meal of chicken, potatoes and green beans so I'm going to heat it up for tonight and serve a Greek salad on the side.

Don't be ashamed of that! I would do that in a heartbeat if it would fit into our budget. I am so incredibly burned out on meal planning and shopping.

Tonight I made pancakes, sausage, bacon, and carrot sticks for the kids. DH works late on Thursday nights so he ate out (lucky dog). I had leftovers.

Yesterday was pot roast and roasted vegetables.

Tomorrow night is dh's night to cook. But I often end up doing it.

DH is working 12-hour shifts all weekend.
So I’m keeping it easy. Tonight we did leftover pasta and meatballs with green beans. Well... that’s what my toddler was served. I just ate a bowl of cereal while nursing the baby haha.

I made pioneer woman's chicken spaghetti for the first time. It was good, not healthy, but good!

dh & kids are doing lentil spaghetti, Costco meatballs, red sauce and garlic bread.

I'm doing butternut squash noodles with red sauce. Need to find a protein to add.

Tonight we had classic beef stew with root vegetables. It wasn't exactly a hit with the kids but it was a nice change from the usual stew recipe I make.

I stuck to the meal plan the whole week. We had roast with radishes for potatoes, balsamic chicken with tomatoes, Cornbread Mexican casserole, chia seed pizza (gf).

That was supposed to come after the meal kit post with the blushing smile. Not Charla's post. I need to be better about making sure I'm at the end of a thread.

I don't know what's for dinner tonight. I'm so tired of menu planning. I'm happy eating a dish of yogurt and going to bed.

I think I have everything to make Chipotle at home again.

How often does dinner include meat at your house? Most nights? How many pounds do you need to feed everyone? 3? 6?

I read it and figured it must be in response to mine! Esp since Charla's dinner was a gift meal.

The ONLY reason I can afford it is because my two older children moved out and I started intermittent fasting all about the same time, so the amount of food we eat is way lower, but I haven't really adjusted our grocery budget. I know I probably should lower the budget and go back to meal planning, but this is a nice break!

And I have actually learned a few things that I will use going forward. Like making individual meatloaves instead of a big one. This saves cooking time and I can roast veggies on the same pan with them! Who knew? Also I learned to make oven fries (which I guess I knew in theory, but sometimes being forced to actually do something makes it

) and I learned to throw sliced carrots in with egg noodles to hide a veggie in there, and that fresh dill is really good in a stroganoff. So that's been cool to find some tweaks to make cooking "fresh" again.

I read in a novel about a family frying up sardines. I like sardines, but I have to be in the mood for them and the only way I ever eat them is plain on crackers and sometimes they seem just a little dry.

So I looked up recipes for pan frying them because that sounds exciting.

And guess what? The recipes I found have ZERO reviews.

I guess they aren't super popular!
