Thought I'd share our meal plan for Lent (six weeks of vegan dinners)

*some of the recipes call for dairy, we just substitute with Earth Balance (for butter) and almond milk (for milk/cream)

Lent: Week One

Sunday - Smoky Refried Bean Soup
Monday - Crispy Black Bean Tacos
Tuesday - Falafel
Wednesday - Cabbage Vegetable Soup and fresh bread
Thursday - Bruschetta with Roasted Bell Peppers, tomato soup and salad
Friday - Moroccan Vegetable Stir Fry with Couscous
Saturday - Fried eggplant cutlets, fresh tomatoes, and Artichoke Tapenade with crackers

Lent: Week Two

Sunday - Andrew's Crockpot Bean Soup
Monday - Eggplant with Butterbeans and Plums over rice
Tuesday - Cream of Cauliflower Soup
Wednesday - Spaghetti Squash and Tomato Sauce
Thursday - no one home for dinner
Friday - Vegetable Biryani
Saturday - Tomato, Rice and Black Bean Stuffed Peppers

Lent: Week Three

Sunday - Easiest Indian Stew
Monday - Butter Bean Soup with Portabellas and Wild Rice
Tuesday - Mixed Japanese Vegetables and Soba noodles
Wednesday - Quick Chickpea Curry with rice
Thursday - Roast Squash with Onions
Friday - Stuffed mushrooms, fried eggplant cutlets
Saturday - Vegan Potato 'Gatto'

Lent: Week Four

Sunday - Mexican Lasagna
Monday - Chickpea Stew over Couscous
Tuesday - Crispy Black Bean Tacos
Wednesday - Super Yummy Potato Soup
Thursday - no one home for dinner
Friday - Quinoa and Red Lentil Cutlets with gravy and Mashed Sweet Potatoes
Saturday - Vegetarian Chili

Lent: Week Five

Sunday - Roasted Tomato and Black Bean Soup
Monday - TLT's
Tuesday - Pasta with vegetables
Wednesday - Fasolatha with fresh bread
Thursday - Roasted Winter Veggies and Green Beans
Friday - Tuscan Torta
Saturday - Sweet Corn & Potato Chowder with Skillet Corn Bread

Lent: Week Six

Sunday - Sea Bean Chowder
Monday - Sweet Potato and Chipotle Soup
Tuesday - Bruschetta with Roasted Bell Peppers, tomato soup and salad
Wednesday - Stirfried Noodles with Eggplant and Basil
Thursday - no one home for dinner
Friday - Fried tomatoes, sauteed cauliflower and green salad
Saturday - Falafel

Holy Week

Sunday - Fish (Palm Sunday)
Monday - Zucchini Fritters with Roasted Red Pepper Dip and Roasted Mushrooms
Tuesday - Jamaican Pumpkin Soup
Wednesday - Quick Chickpea Curry with rice
Thursday - Gigantes Plaki
Friday - TLT's
Saturday - Agginaropita (Artichoke Pie), green salad

Oh, bless you!! I was just feeling guilty that I wasn't supporting DH very well for this fast. I was overwhelmed.

I made the Cabbage Vegetable Soup you posted and it was delicious! J LOVED it, too! I put in onions, garlic, carrots, spinach and purple potatoes (that's what we had). Definitely adding this to the list of dishes I can make regularly!
