I added spinach to it, and it definitely needed extra salt. But it's really good! It tastes like beef stroganoff without the noodles - so you get the taste without the carbs

Last night I baked Aldi's mediterranean seasoned fresh salmon and had tzatziki, yellow rice, asparagus from the garden, and marinated Greek salad on the side.
Tonight will be ham and au gratin potatoes in the crock pot, green beans, and arugula and spinach salad with lemon vinaigrette.

Monday was scallops and risotto with asparagus.
Tuesday was chicken tacos. Wednesday we went out with friends. Tonight I'm trying Asian Peanut Rice Noodles with Chicken and roasted broccoli on the side.

I was in the gym coaching from 7 am to 7 pm... so I found a local organic grocery store here in Philly and ate vegan lasagna and carrot cake.
