please help me make fries...
i know...it should be easy. i want to use potatoes, sweet potatoes and maybe squash. cut into strips, toss with olive oil and salt and pepper...but then what?
what temp to bake on? and also where in teh oven should i put the tray...low or high? thanks mamas!! |

Yeah, is there a secret to getting them crunchy without deep frying? Mine are always good, but not crunchy like real fries.

Cook them twice. That's how "real" fries are done. They're parboiled (boiled briefly for a few minutes) at the factory, frozen and shipped out. Restaurants pop them in the fryer for 2 minutes to crisp them and sell them. When I was using pre-made frozen, I'd spray cooking oil over them spread out single layer on a baking sheet and stick them under the broiler for a few minutes. Nice and crispy. Now, with home cut and made, I toss them with oil and either bake for 20 minutes at 400*, or broil them. Still tweaking that recipe.

After my last adventure in making fries took an hour and a half and almost cost me a finger, I decided I'd spring for the organic fries and spend that time playing with my kid instead.

i'm going to try this with thinner fries. But I wanted to share another way if you are interested. I cut potatoe wedges and put them in a large bowl. Pour a little olive oil and chili powder and then mix to coat with your hands. Bake at 450 or 425 for about 25-30 minutes. YUMMO!!!

I just made the fries JellyBean suggested. YUMMY! I forgot to drain them on a paper towel when they were all done though, they would have been less greasy. I ate all that I cooked, 2 med. potatos.
DS and DH are out bowling, dd1 is sick and dd2 wouldn't try them. Oh well, more for me!

I make roast potatoes all the time that get crisp... I toss them in pesto and bake them at 450 degrees for about an hour (flip them about 30 minutes in) on a cookie sheet... I bet it would work to do fries that way too... just toss them in oil, sprinkle with salt... same temp, maybe a little less time as they wouldn't be as thick...

just brush with coconut oil and roast in the oven...put in baking dish, high heat...like 400 or even 450. it only takes a few mins.
