Default Gluten-Free Veg Recipes?

We're mostly GF (not Celiac; just feel better when we don't eat much wheat), but I'm getting burned out on our usual rotation. Anyone have any favorite GF/Veg recipes they want to share? Thanks!

Sorry you have had no replies. Hope you haven't been starving.

Potato Soup
Sauté onion garlic carrot celery or whatever you like. Then add unpeeled chopped or sliced potato. Cover with half canned coconut milk and half unchicken broth. Simmer When the potatoes are fork tender add frozen corn and canned green chilis.

Pumpkin enchiladas are on the everyday food website. I use black beans instead of chicken.

Veggie fajitas using mushrooms instead of meat.

Fresh spring rolls or Nori Rolls.

Bibimbap from The vegan Zombie .

Taco Salad or potato bar

MMMM Potato soup is so popular in this house.
Another popular soup is white bean soup and vegetable stew. They all typically get served with GF biscuits or cornbread.

Other GF staples for us are polenta in a variety of ways and guinoa salads or patties. Which makes me realize I really want a cauliflower quinoa patty on a bed of spring greens for lunch soon.

Baked or fried apple or corn fritters with baked beans and coleslaw.

(Not sure if you do dairy and/or eggs, but...)we regularly have chili and gf cornbread, quinoa and black bean stuffed peppers, split pea soup, lentil vegetable soup, nachos, taco soup, spinach mushroom lasagna made with tofu ricotta and strips of grilled zucchini in place of noodles, eggplant rollotini (strips of peeled, grilled eggplant stuffed with tofu ricotta and spinach and rolled, topped with marinara and smoked mozzarella). Taco salad, stir fry, vegetable fried rice, spring rolls, pizza on the crust from Trader Joe's, roasted vegetable frittata and spring greens, BBQ baked tempeh with mashed potatoes and sauteed green beans
