vegan lasagna
I made this lasagna today
http://engine2diet.com/recipe/raise-...otato-lasagna/ the recipe online is not clear - it calls for firm tofu - I used extra firm and it was fine. I could not find whole wheat lasagna noodles and just used regular ones. There was not room for all of them in the pan. Perhaps they had a different size of noodle? Anyway, I got a large box and used half of it. It is extremely labor intensive. And extremely good. I used red, orange and yellow bell peppers and only half of an onion (because I don't like too much onion) and I put in some fresh basil and rosemary from my garden. I had leftover mashed sweet potato and leftover nuts from the topping and leftover sliced tomatoes. I took it to a church home meeting tonight. People really liked it.
