fermented green tomato fail - any suggestions?
So, a few weeks ago I had to pick all my green tomatoes because we were having a week of very low temps. I had a lot. I made green tomato soup and green tomato bread and some are gradually turning red and I made fermented green tomato pickles. At least I tried to.

I took one out today and cut into it - not fermented or changed at all - just still plain old green tomato. What did I do wrong? And what can I do with it now? I have a large jar of them. Rinse and put in the compost heap? Let them sit longer?

I'm sorry you didn't get an answer. I have never successfully fermented anything so unfortunately I'm absolutely no help.

Maybe let them sit longer? (And maybe change your fermenting vessel, depending on what you are using).
These links aren't about tomatoes, but I found them very informative for fermenting in general. There are all sorts of recipes and info online, but this blogger seems to be experimenting and using science, which I like. She actually says sauerkraut should go for weeks (4 I think!), while some sites advise only a week or less, which she says won't get you the good stuff and balance that you are fermenting for! I can't say that it's proven at our house yet, but I am hopeful. We have our first two batches of kraut fermenting in Fido jars right now.
