Default easy to make vegan recipes

Does anyone know of any easy to make vegan meals? Preferably low cost, dairy free?
My 16 year old niece is going to be staying the weekends with us this summer and I would love to learn to make some good meals for us to eat while she is here. I have been wanted to do this for awhile so I am really excited about this opportunity. Any ideas greatly appreciated.

will you eat tofu? If so...cheap meal:
1-2 bags frozen stir fry vegges, add soy sauce while cooking
1 block tofu, cubed, stir fried
rice (stir fry or make plain and top w/veggies & tofu)

We love mexican food.

Homemade salsa and burritos or tacos.

But, for a special treat I make homemade taco shells by frying fresh corn tortillas in some olive oil. Then I sprinkle them with a little salt. Just bend them over right when you take them out.

Black Bean burgers.

Pasta salad. Just pasta, a can of bean salad, olives, and your favorite dressing. You can add some herbs, tomatos, peppers, whatever if you have them around.

Since it's summer I'm pretty partial to big salads or Veggie sandwhiches like they make at Subway. Just go to the store and get a great big French Bread loaf. Normally those are Vegan. Slice it with the V like they do at Subway. They you can hollow it out a bit if you want. If you have some Muffalta or olive tapanade you could spread that down the bottom. Slice up lots of veggies. You can add some Veggie deli slices if you want. Load it up with everything you can think of. Peppers, Pepperocinis, olives, pickles, lettuce, spinach, zucchini, shredded carrot, canned sliced beets etc. Pour a little bit of your favorite dressing over the top. Put the lid back on and then slice into manageable pieces. A big loaf of bread should serve quite a few people.

If you grill then you can slice a bunch of veggies on an angle. Carrots actually work quite well if they are sliced on a big angle. I wish I could explain that better. You need a mandoline or a really sharp knife. Put a bunch of veggies like peppers, onion, carrots, zuchinni, mushrooms (if they are big) that are sliced so they won't fall through the grill in a marinade. You can do a fajita one then serve it with corn tortillas, beans, rice, guac, and sour cream.

Those premade Gardenburger riblets are good if you cut them in two and serve them on warmed or toasted dinner rolls. Serve with coleslaw. I like to put my coleslaw in the sandwhich.

You can make grill or oven packets. Just put some sliced veggies in the packet. I like to top that with a riblet. Don't forget garlic cloves. Seal up and grill or put over the campfire. Serve them by setting in a bowl and just opening up the top.
