Can I use white whole wheat flour...
in a bread recipe that calls for all purpose?
Please forgive me if this is a stupid question.

"White" flour is all-purpose flour.
"Whole Wheat" flour is not. You can (usually) substitute whole wheat flour for all-purpose, but the texture will be denser and whatever it is will not rise as much. Sometimes recipes suggest to use 1/2 whole wheat and 1/2 all-purpose so that the texture won't be as affected. Usually it doesn't matter, like for biscuits or muffins. On the other hand, if you are trying to make christmas cookies, pastries, or something delicate? Don't do it. In the bread, it means that the loaf will be smaller and denser. Like, I once got away with making a loaf too big for my bread machine, because I'd used all whole-wheat flour, so it was shorter. (Side note: Why would they put amounts in the book that are too big for the machine you have?!?!?!) |
