I love making soups! Can't beat one pot clean up. Here's my newest fave creation.
Italian Chicken soup Chicken, cut into bite sized pieces Carrots, diced small onion, diced small celery, diced small peas (I use frozen) spinach minced garlic potatoes or gnocci Heavy cream Chicken broth Salt & pepper to taste shredded parmesan cheese Heat large soup pot and drizzle with Extra Virgin Olive oil. When warm, add carrots, onion, & celery. Saute lightly. Add large spoonful of minced garlic. (Do this at the last minute so garlic doesn't burn.) Remove cooked veggies to bowl & cover with foil. Toss chicken lightly with whole grain flour. Shake off excess flour before adding to pot. Depending on how much you're making, you may need to cook the chicken in batches. Brown chicken on both sides. Add cooked veggies back in. Add heavy cream (one or two times around the pan.) With wooden spoon, stir everything together, scraping bits from the bottom. Add potatoes or gnocci. Add broth, just enough to cover potatoes/gnocci. Cook until potatoes are fork tender and chicken is done. Just before serving, add a handful of spinach, peas, & shredded parmesan. Stir. Serve with toasted garlic bread & extra parmesan for topping. (I use french bread cut thinly & sprinkled with garlic salt.) |

I made Tomato Chicken Rice tonight.
So easy...and good! 3 quarts chicken stock 1 jar pasta sauce fresh breasts or leftover chicken (1 lb or so) 1 cup rice thyme parsley salt and pepper Boil stock. If you need to cook the chicken add it for about ten minutes until done. Remove it and shred it. Add pasta sauce and thyme. Bring to boil. Add rice and simmer uncovered on low for 25 minutes. When rice is nearly done add chicken and parsley and salt and pepper. |

I just recently did up my meal plan for the next month, and there are quite a few of my favorite soups included. If there's anything good about winter it's probably soup!

I've been addicted to Taco Soup for a year or so now. I use one of the basic recipe off of Allrecipes.com and then vary it to taste and how many homemade beans, etc. I have on hand. I also add my homemade chicken stock to make it more soupy and less like chilli. Also, I think using the homemade taco seasoning mix (recipe also on Allrecipes.com) makes a big difference.
We love this with plain yogurt, shredded cheese, avocado chunks and tortilla chips. This is even better as left-overs! |

I made one by accident that we loved.
I'm in a meat CSA & we get ground beef & sausage in chubs. I meant to pull out the beef, but grabbed the sausage by mistake. I browned 1 pound of the sausage. Added about 8-10 cups of chicken stock 14 ounces of diced tomatoes (with juice) 1 chopped onion 4 cloves of garlic, minced green beans, corn, red potatoes & black beans. Along with thyme, oregano, parsely, salt, & pepper. Hubby, who rarely says something is good without critique kept saying how really good it was & to save the 'recipe'. He later asked where I found the recipe. |

I make the world's best chicken tortilla soup.
Throw a couple b/s chicken breasts in a pot with water (if you have several hours) or a quart of chicken broth (if you have less than an hour) and water. Also add a couple cups of milk or cream. Add a can of corn, a can of black beans, about half a jar of salsa, half a pound of chorizo, a bay leaf, a couple dried chiles if you have them, and taco seasoning. I use chili powder, cumin, paprika, and garlic. Also a couple tablespoons of brown sugar -- and this is what really makes it-- about half a cup of cinnamon. It is sooooo good.

I made an easy chicken chili last week. We all loved it.
I had canned pinto beans,so I used those. Sauteed a red bell pepper, a little thinly sliced onion and garlic, and added two cans of drained beans and chili spices. Added a couple cups of chicken stock, simmered for a half hour. Added in leftover baked chicken breast and a handful or two of frozen corn for color and crunch. It was so, so good. Probably making it tomorrow night. Oh, and watch your sale ads as chicken leg quarters go on sale super cheap this time of year. I buy a bunch of them and toss two or three in my crockpot overnight with soup veggies and herbs and then have delicious stock to freeze and use in soups. Lentil Soup is a meat free meal my carnivorous DH and DS love, and at $2 for a huge pot allows me more grocery budget wiggle room. Cook lentils with diced carrots and celery, peas and a diced peeled potato if you have it, a bit of carmelized onion, whatever herbs you have that sound good, and salt. Add a bit of roux or instant potatoes to make it more substantial. Ta-da. Hot, comforting, and thickens as it stands. I should add, I sometimes use mashed potato flakes to thicken a wimpy soup. Works great, I've even used them in chili (out of desperation, but it worked!).
