WIC tortilla pizza

Tomatoes pured or tomato paste
Mozzerela cheese
whole wheat tortillas
veggie/fruit toppings
*Italian seasoning (this is not a wic product)

grate cheese
mix tomato paste/pure with italian seasoning to make a sauce

Preheat oven to 425 F
pierce tortillas in a few places and put on baking sheet
Bake about 2 minutes (until crisp) and remove from oven
Spread sauce on each torilla
add cheese and then selected toppings (not to many as pizza is thin)
Bake 5 minutes or until cheese is melted

cut in quarters and serve

ETA: this is one tortilla per person

It sounds very yummy but not very filling.
Maybe if I put spinach and mushrooms in the sauce to make it heavier?
Ive got a super tight grocery budget but I think well try this!

For us it stretches our budget because we use 90% wic ingredients (sometimes we add chicken). I have found for my kids that the size tortilla we use is about the size of a personal pizza and plenty for them. The grown-ups and big kids often have a salad on the side (And the grown ups have 2 pizzas plus the stuff the toddler doesnt eat )

I would not make the sauce too much heavier because the tortilla is not strong like pizza bread

Mmmm, it made such a yummy dinner tonight!
I topped it with sausage my mother shared with me and mushroom pieces.

You get tortillas on WIC? Hmm different states must have different things?

I thought CA was one of the last hold-outs of the newer system.
They added whole grains. You can get 16oz of whole wheat bread or tortillas (Even like hot dog buns) or you can get brown rice.

They also added the produce and reduced the juice.

But my favorite change was that I can get soymilk now

We do too but we don't get soy milk. We can't buy white potatoes with our wic produce but we get like so much in fresh veggies or fresh fruit. Ours you can only get a loaf of whole wheat bread. I think the program is much better then it was though.

soymilk for kids takes a doctor's note and we do not get potatoes either. But it is a huge improvement

Hmmm...I don't get cheese anymore, but we do get bread(though all brands I have found have hfcs, so I opt for the brown rice and oatmeal instead).
I wish they had options for milk-allergic kids with soy intolerance. Guess ya can't please everyone. I'm thankful for what we have--it has greatly improved!
