Well, I got distracted by MamaCodi's birth story, but did get to them in time!!!
I seasoned with a basil and lemon rub I had, put some zest on there and then squeezed some fresh lemon and it tastes. . . Well, lemony ![]() Thanks for the help ladies!!

If you do them again, let me share my favorite way to do tilapia and flounder! ds loves them both. I salt the fillets on the bottom side, lay them in a shallow glass dish coated with olive oil (the dish, not the fish...oh, a rhyme! it's so delish!).
Anyway, I pour the juice of a whole lemon (you can use half if you don't like it too lemony) over the fillets, sprinkle them with salt and paprika, dot them with butter, and bake them at 425 for 10-12 minutes. |

I make it different ways. If I'm in a rush, I just dump a jar of salsa over it and bake. But, ds loves when I make it with maple syrup, garlic, ginger, and scallions. Per four filets, you need:
1-inch cube fresh gingerroot, finely chopped or grated 2 cloves garlic, peeled and finely chopped or grated 4 green onions (green part only), finely chopped 1 cup finely chopped cilantro 2 tbsp grapeseed (or safflower or olive) oil Dash of soy sauce or Braggs 4 tsp dark maple syrup Whisk it all together. Then make a parchment or foil packet around the fish (you can do this individually, but I'm usually lazy and just wrap all four filets together), dump on the sauce (divide evenly between filets if wrapping individually), close packet and bake at 400 for about 20 minutes.
