worst ever vegan pancake!

I am so dissapointed. I wasted so much ingredients on this recipe. The batter comes out SO watery its unbelievable. It will not form a pancake correctly because it's so runny and then even on my burner on 3, it cooks way too much on the bottom side and it's impossible to flip because it's just so runny! GAHHHHHHH can someone give me a tried and true great vegan pancake recipe? Jen?? I'm cranky. Can ya tell? |

2c Flour
2.5 tsp Baking Powder .5 tsp salt 2 Tbs cornstarch 2 Tbs sugar 1.5 c soy milk 2 Tbs Melted earth balance If for some reason it seems runny, just add a bit more flour. |

I'm not vegan, but my kids are allergic to dairy and eggs, so I use lots of vegan recipes. Here is my pancake standby.

We just take the Aunt Jemima Original pancake mix, and add almond milk and applesauce (plus a dash of cinnamon)

I tripled that recipe from the original and we usually have leftovers if I serve some sides. The leftovers heat up nice in a toaster oven.

I make vagan pancakes that everyone raves about...in my vitamix, I put-
2 tbs oil 1 tbs honey/sweetner 1 tbs flax meal + 3 tbs water 1 c milk replacement (almond milk is good..water works if you have to) whirr it while it's running on like 3 or 4, dump in 1 c flour 2 tsp baking powder 1 tsp salt cinnamon/nutmeg if it is too thick or thin, just add a little more milk or flour as needed. They are really good with choclate almond breeze and some cocoa powder I double the recipe and it makes 12-18 big pancakes |
