MoS, that sounds delicious! makes me hungry for pot roast...might have to put that on the menu. I've got several roasts in the freezer
I have been flying by the seat of my pants for the last few weeks--but also using up a lot of freezer stuff, so that's been good. recent meals: sloppy lentils with sweet potato fries and salads fettuccine alfredo with grilled chicken and broccoli plus Brussels sprouts last night we had dinner with friends and they cooked--Smitten Kitchen's black bean pumpkin soup. tonight...??? I didn't think I had to cook b/c we were supposed to be having chili at DS1's school's fall festival...but it got postponed maybe I will make chili here.

Roasted potatoes & fennel along side rosemary baked chicken. My first time roasting fennel & I really liked it. I was expecting a stronger flavor so was pleasantly surprised by how mild it really is. A yummy success.

My husband said he didn't taste it at all, however it takes a lot to touch his taste buds. I made chicken the other week that was waaay too spicy for me & hubs said it wasn't hot at all.
Since it's in season now we got it really cheap at the vegetable store which is the only reason I bought it. Hubs also likes to eat it raw so I knew it wouldn't really go to waste. |

I made a huge chicken and veggie spinach salad with grilled halloumi cheese and served that along with all the leftovers in my fridge (enchiladas and lasagne) so we had a delicious meal and I cleaned out my fridge in one step.

Because I'm such a huge dork and like to take pictures of my food, here's a picture of my garden salad from yesterday's dinner. Yes, that's a humongous salad and I ate every single delicious bit of it. And yes, I LOVE feta cheese. Totally LOVE.
And here is one of our absolute favourite salads of all time right now. It's this recipe: http://www.anjasfood4thought.com/201...-halloumi.html I didn't even know what halloumi cheese was before looking at this recipe, and I had to go to a specialty cheese store to find it, but now that I've tried it there is no going back. That stuff is AMAZING. That's the grilled cheese you see there. Then the pears are also grilled, which I would never think to do but it's absolutely delicious too! ---------- Post added at 03:08 AM ---------- Previous post was at 03:05 AM ---------- oooh, and here's a picture of another new recipe I tried a few days ago. it's a variation on this recipe: http://www.epicurious.com/recipes/fo...-Cheese-103833 but since dh and I do not eat flours (and consequently pasta), I used my julienne cutter to cut up zucchini and carrots, sauteed them in olive oil, and used that to substitute the pasta. Tossed in the goat cheese, then added the tomatoes and fresh basil. Super good.

Homemade pizza tonight and salad! We've been using roasted garlic in place of red sauce and putting tomatoes,onions,kale,and cheese...yum!
I love seeing food pics too! I might take a pic of my pizza later. |

We had our big main meal at lunch time today since the kids are off of school and dh is off of work, and two of my kids are leaving soon for a weekend church retreat.
We had grilled salmon, roasted potatoes, roasted vegetables (asparagus, carrots, onion), and a garden salad.
