I made pork chops and French fries we had them with cherry tomatoes and carrot sticks.... Not very creative but no one fussed so I call it a win.

We ate at the hot food counter at Safeway tonight, not judging you!

I scored a bunch of beef on clearance, which is the only way we can afford it anymore unless beef neckbones are in stock. So far I've made:


SLOW-COOKER BEEF STROGANOFF

Begin after lunch at the latest, preferably after breakfast. Combine in a shallow dish:

1/2 cup flour
Salt, pepper, and dry mustard, to taste

Roll in the flour:

3 lb. cross-cut beef shank

Reserve the remaining flour. Heat in a skillet:

2 tbsp. cooking fat, preferably olive oil or butter

Saute the floured pieces of beef shank until well browned. Meanwhile, cut into slivers:

2 yellow or sweet onions

Lay the meat in a slow cooker and turn on Low. Saute the onions until quite soft. Meanwhile, scrub, trim, peel if green, and cut into chunks:

6 baking potatoes

Lay them on the meat. When the onions are soft, ladle into the pan and bring to a boil:

4 cups broth or stock, any kind except fish or seafood

Bring to a boil, pour over the meat and potatoes, cover, and leave to cook on Low. About an hour before dinner, take the meat out of the pot and put it in a dish with a rim. Stir the reserved seasoned flour into:

2 1/2 cups sour cream or plain yogurt

Stir the yogurt mixture into the pot. When the meat pieces are cool enough to handle, cut them off the bones, cut them into stew-sized chunks, and put them back into the pot. Any marrow in the bones is cook's treat. Sprinkle the pot generously with dried dill weed and serve hot in bowls, followed by a fruit-based dessert.


SLOW-COOKER BEEF STROGANOFF--SECOND DAY

Dice any leftover meat and potatoes, reheat in the broth, and serve over freshly cooked rice with vegetables on the side.


HOMEMADE VEGETABLE BEEF SOUP

My husband the soup-hater will actually eat this. The secret is to load it to the brim with vegetables and barley and don't forget the ketchup!

Heat in a skillet:

2 tbsp. cooking fat, preferably olive oil or bacon grease

Brown on all sides:

2 lb. beef soup bones or cross-cut beef shank

Meanwhile, dice:

1 sm. onion
1 stalk celery

Put the meat or bones into a slow cooker and turn it on Low. Dump on top:

1 lb. frozen vegetable macedoine (peasbeanslimascornncarrots) if using beef shank, 1 1/2 lb. if you only have bones
1/4 cup raw barley

Saute the raw vegetables in the skillet until soft. Season with:

Tarragon, salt, garlic powder, and black pepper, to taste

Stir until the pan is fragrant and add:

1 or 2 4 oz. cans mushrooms, with can liquid (leave out if you don't like mushrooms)
3-4 cups any broth or stock except fish or seafood
2 healthy squirts ketchup
1 tsp. soy sauce, browning, or Worcestershire sauce

Stir gently, bring to a boil, and pour into the slow cooker. Add more broth if needed to just barely cover the meat and vegetables. Leave to cook all day. About an hour before dinner, take out the bones or beef shank cuts, cut the meat off when cool enough to handle, dice it, and return it to the pot. (Any marrow is cook's treat.) Serve with freshly baked whole wheat bread.

Butter Chicken (http://tastykitchen.com/recipes/main...ter-chicken-2/), brown rice, and roasted green beans. I don't think I can ever eat steamed green beans again after roasting them. I'm not a big vegetable lover (I eat them for health but am not excited by them), but YUM!

That is something I have never tried to roast...now I will have to! We love roasted veggies (sweet potatoes, Brussels sprouts, and cauliflower in particular) and we love green beans, but I never thought to combine the two.

Tonight we're eating totally SAD for halloween and having mummy dogs (pigs in a blanket) with french fries and some sort of veggie. I need to go to the grocery store so bad, my fridge is totally empty!
