Tonight we're having French toast and sausage. Parent teacher conferences paired with needing to shop, leaves me being "creative".

I used the same recipe as for the potatoes. I put the chicken in a glass baking dish, then drizzled it with olive oil and yellow mustard, sprinkled on some minced garlic, oregano, salt, and pepper, and topped it with lemon zest and fresh lemon juice. I baked it for an hour with the potatoes. Grilled would have been more authentic but oh well. It was delicious.

We had leftover paleo pulled pork with green beans, lactofermented sauerkraut, and .. err.. rice. Just got a batch of paleo crockpot meatballs into the crockpot about an hour ago, in prep for dinner tomorrow night: http://onceamonthmeals.com/paleo-crockpot-meatballs/

I have this in the crock pot for dinner for the kids tonight: http://lecremedelacrumb.com/2014/05/...-taquitos.html

Cream cheese chicken tacquitos. I made it before and the kids LOVED it. So I doubled the recipe so that we can have more leftovers.

I'm tiiiiiiired...babysat two extra girlies all day and forgot how much extra attention/supervision/engagement a 22mo requires than a super-independent and trustworthy 4yo ...so I don't feeeeeel like cooking.

But. Prob I will throw together hashbrown quiche, b/c I have everything on hand, and I'm pretty sure I can dig muffins out of the freezer to go with it.

Tomorrow night, when we have 8 extra people for dinner...yet I am going on an all-day field trip with DS2...is another story

hot dogs & steamed zucchini. We were running late so it was quick. According to my planner it was supposed to be broccoli & cheddar with whole wheat pasta but I haven't shopped for the week so we're a bit behind. Tomorrow is supposed to be cinnamon thyme chicken but we'll see. Since I have zucchini, brocollini, & broccoli still in the fridge, one of those will go with it.
