Costco Organic Tortilla chips are the top request. Any tortilla chip will do, though. I usually have to do both chips and rice. Cheese, sour cream, and hot sauce, too.

I'm making a Mississippi Pot roast tonight.

Question - I'm super busy today and have a rehearsal tonight. Do I make Mashed potatoes?? (Littlest's favorite food. It may be the only thing she eats. I use cream cheese so there's at least a tiny bit of protein.) Or do just chuck some root veggies in the crockpot? (easy option - radishes and carrots, perhaps green beans at the last minute as well)

I usually have cornbread or corn chips with chili.

Tonight I am making blackened tilapia and veggie rice. I can't remember who recommended the veggie rice recipe, but it's become a favorite around here.

Chili we usually serve with corn bread, or corn/tortilla chips or most often just topping like cheese avocado etc..

Tonight we had vegetable and edamame stir fry with buckwheat soba noodles

we have tuna sandwiches and vegetable soup on tomorrows menu. However I'm considering changing it for the potato pancakes we'd planned earlier but had the nix it because of a power failure.

I wouldn't have either, but I have a large amount of apples that need eaten! Melt a little butter in a saute pan, add sliced apples (no need to peel), sprinkle with cinnamon and saute until they have a little color and are slightly softened. I've never added sugar as I think the apple varieties I use (fuji, gala, or pink ladies) are sweet enough.

My girls will love this as a dessert tomorrow, I think I will experiment with keeping them warm in a low oven while we eat dinner

Dinner tonight is focused on using up some of the things I had accumulated from our weekly produce baskets the last couple of weeks. I stopped by the store yesterday as well, and they had a pretty good sale on beef roasts, so I bought 3 - one to use tonight, and two to put in the freezer for now. Anyhow, in the crockpot, I have the roast cooking along with a variety of mostly root vegetables (sweet potatoes, onion, turnips, celery, minced garlic, and carrots). I dumped a bottle of Newman's Own balsamic vinaigrette over the top. It is smelling amazing!

I also have cranberry apple crisp in the oven right now. We received cranberries and apples in our basket this week, and they sent a recipe for it home. However, it called for oats, which I cannot eat because I am allergic to them. I would have never thought of making an apple crisp with cranberries! I googled for a paleo/gluten free recipe that didn't have oats, and found one to use instead. That is also smelling very good! https://lexiscleankitchen.com/grain-...y-apple-crisp/

I am getting ready to also make some Taziki style rice for an additional side dish. I had a bunch of limes to used up, so this recipe will use most of them up. I like beets. I grew up eating them pickled mostly since my mother's side of the family is full-blooded Swedish! But I like them not pickled as well with a little butter and salt or only just salt if I'm too lazy to get out the butter.



This weekend we are having my grandma's meatloaf, crockpot mashed potatoes, gravy, and green beans.
