Vegetarian Christmas Eve
I need some ideas!
I want to do a simple but still special Christmas Eve dinner for my immediate family but I'm at a loss and my family hasn't been much help. So, what are some of your favorite special but easy vegetarian meals? |

Soup! So so so many delicious soups that are veg (or easy to convert to veg). Make homemade bread/rolls/croutons to dip in it.

I love lasagna it has been so long since I've made it because my family isn't such a fan. I just don't understand how its possible to not like lasagna.
I think we are going with soup and salad. As simple as it is the kids can load up their own salad and we'll make two special soups that I don't typically make the rest of the year. Maybe a pumpkin soup and a spicy tomato parm. |

How did it go? My favorite thing to make is tamales in the crockpot. We didn't do much though this year. We have had a few rough years. This year my mom came to visit (we moved this summer). We mostly snacked and it was really nice.

It was really nice.
I made tomato soup at the request of my youngest 2 children. We had a huge salad and some fresh baked bread. My in-laws brought their own soup because they can't eat tomatoes so it wasn't a big deal that we didn't provide meat. I don't think I've ever had tamales. |
