Need yummy vegetarian recipes that a meater eater would like....
Please don't hurt me....yes we are meat eaters, but I have been wanting to add 2-3 non-meat meals per week to our menu. However, I have no good recipes. Please share with me some good, quick, and easy meal ideas/recipes.

DH is a big meat-eater and this is what he likes:
Chili Corn Chowder Minestrone Vegetable Soup Stuffed Peppers You'll find that adding beans will add some heft to the meal (replacing the meat). Maybe others will have some other ideas |

my favorite vegetarian meal is spainish rice and black beans, in tortillas (hot sauce is good with this)
its super easy, and super yummy. Even my "wheres the meat?" hubby likes it |

I make a veggie lasagna that is good. Just adding in shredded zucchini and pureed mushrooms where the meat would go.
Most tex-mex meals can be done with beans instead of beef or chicken. Beans and rice is super cheap too. Veggie stir-fry over rice. |

Potato burritos are excellent, and you could have spanish rice on the side.
Veggie lasagna is always good. Vegetable soup with black beans is hearty. DH and I were vegetarians for a couple of years. We would fix regular meals and substitute ground soy for ground meat. Soy isn't so popular healthwise these days but I think it would be fine in moderation. We would prepare it in chili and tacos.

we love sweet potato and black bean quesadillas
we cut the potatoes up in to think slices and roast them in the oven. Then add black beans, cilantro, scallions or onions or neither, and pepper jack cheese, and then grill them up. They're sooooo yummy. Especially with sour cream. I serve them to company and at the end of the meal, I mention that it was our first favorite intentional veggie meal. Usually people hadn't thought about the fact that it was veggie. |

I've been trying to collect similar recipies - because i'm sick of cooking meat for people when they come over.
One of my favourites is just a vegetarian quiche - especially if you throw some nice vegies in, and some feta or goats cheese, most people will find it really yummy and not notice there's no bacon in there. Vegie Lasagne is good as well. I also do vegetarian burritos, with beans which are yummy.

Here's the one I made tonight, but I vary it according to what vegies I have!
Base: either make up a basic shortcrust pastry base by hand, or buy one Filling: 3 cups pumpkin / sweet potato / zucchini etc. Cut vegies in small squares, and roast in the oven for 30 minutes Fry one onion and a garlic. Add a couple handfuls of spinich or silverbeet and heat until wilted. Beat 3 eggs for one minute. Add 1 1/2 cups milk (or half cream for a richer flavour), a teaspoon of stock powder, 2 tbl spoons parmesean cheese, and some chopped up herbs if available (chives, basil, parsley, oregano...) Beat till combined. Place onion mixture over the base. Top with roasted vegies. Pour egg mixture over top, and sprinkle with grated cheese. Bake in a moderate oven for around 40 minutes. Some feta or goats cheese makes it really yummy. Sometimes I skip the onion/spinich mixture, and just add more vegies (e.g. asparagus, leek..)
