Fiesta chicken
Have you made this?
http://mylitter.com/fiesta-chicken-crockpot-recipe/ I have and it is soooo good! But I think 4 chicken breasts are too much, I use 2. I'm wondering what green vegetable I could add. Oh, I think I've eaten it with green beans on the side. It's been at least a year since I've made it, making it tomorrow.

I'd serve it with a nice salad - mix some spinach, kale, dark, leafy greens and whatever else your family likes to add. I also think I'd skip the fiesta ranch dip packet and use a homemade taco / fajita seasoning I make. But it sounds like a really easy one to throw together and would be good to have ingredients on hand for days when I'm struggling with pain.

That's sounds really good for ski nights. I'm always looking for crock pot meals that will be ready after a long day of skiing.
I like the idea of using my taco seasoning. |

We had this tonight, so yummy! I had left over green beans on the side with mine.
I wonder how it would taste with taco seasoning instead of ranch? Oh, and I cooked it with 2 chicken breasts and still felt like it was a lot of meat.

2 chicken breasts feed your family? We need 1/person. With a teen boy? Lol my teen boy is now 5’11’ and 170# so he can probably polish off 2 breasts himself lol plus my gymnast puts it away too. I’d probably serve this w rice and a salad.

I call this Aztec chicken. Or that's what the recipe I have calls this. Instead of rotel and ranch dip mix, it calls for salsa.
I haven't made it in years because other people I my house don't like it. In fact, most shredded chicken things don't go over too well. They eat it but I end up with tons left. Sent from my SM-G930P using Tapatalk

Thanks for the inspiration. I made this the other day with some modifications. I didn't have corn so I threw in diced onion and green pepper. I used a mix of ranch and taco seasonings and sprinkled cilantro on top to serve. We ate it in shallow bowls with hot corn tortillas. Everyone liked it.
