I'm going to attempt to make my bean, kale, and sausage soup vegetarian by using soy chorizo in place of sausage (that's the only veggie sausage type option I found at Trader Joe's besides soy hot dogs). I don't know how much chorizo is too much in soup if you don't want it crazy hot. I guess I'll find out!

Omz you guys. Brunch burgers. Ds saw an ad for them at a restaurant on tv, so I made my own. Burgers (veggie) with a fried egg, cheese, and a hash brown patty on them. I don't even want to think about the calories but they were SO. GOOD.

Family will be making sausage and sauerkraut, roasted potatoes, sauteed cinnamon apples. Probably need a veg but don't think I have a suitable one on hand.
