Vegan pudding?
I was wondering if there is a good vegan pudding recipe out there? I have some granulated tapioca.... I'd also like to be able to make a good fudgy chocolate one. ohhh and a creamy banana one. The closest I can make them taste to the schwag boxed kind where you add milk and let it set in the fridge, the better!

Okay, um... This might not be good, but I don't see any obvious animal ingredients on the box of cheap instant chocolate pudding I just bought at Aldi. It does have the ambiguous "natural and artificial flavors" ingredient on the label but the allergy info only lists soybean. Some brands have dairy products but this one doesn't. I make it with soymilk. It's total junk food of course.
Ingredients (just in case I'm missing something hidden): Sugar, modified food starch, cocoa and less than 2% of disodium phosphate, tetrasodium phosphate, natural and artificial flavors, salt, partially hydrogenated soybean oil, mono and diglycerides, propylene glycol, red 40, yellow 5, blue 1. On second thought maybe you don't actually want to eat that. It tastes better if you don't read the label first. Any good homemade pudding recipe can be subbed with soymilk or better yet almond milk.

I have good pudding recipes for all flavors (all from Tofu Cookery) but they do not taste like those nasty boxes! Let me know if you want them. (the hfs should have some vegan instant stuff if you want...)

This is one of our family faves. It's a different type of pudding, more of what I consider an "English pudding".
1/2 cup flour 1/3 cup sugar 3/4 tsp baking powder 1/4 salt 1/2 cinnamon (or more, some ground cloves is nice too) 1/3 cup "milk" 2 to 3 medium apples cubed. You can leave the peels on if you want Mix dry ingredients, then mix in the wet. Stir in the apples until well mixed and spread into an 8x8 baking dish. Then mix 1/3 cup water 1/4 cup sugar 2 tbsp maple syrup 2 tbsp "margarine" in a saucepan. Bring to a boil, and then remove from heat and pour over batter. Do NOT stir. Bake for 40-45 minutes at 375. Great for breakfast or dessert. Adapted from Sarah Kramer's La Dolce Vegan |
