Queso, anyone?
I've been craving queso, but the only recipes I can find use a "loaf of process cheese food." Anything that has to be described that way should not be consumed.
So, does anyone know how to make it with REAL cheese? |

Oh oh I would be so happy if there were a way. Or even some kind of bean dip that didn't ask for that stuff. I cannot stand cooking with that velveeta stuff or even looking at it, though I can eat it if someone else cooks it and I don't really think about it (just one of my oddities I guess)...

Yep. The key is to make a smooth cheese sauce - by mixing the natural cheese with either sour cream or cream or the like.
Here is one recipe I found on line: White Cheese Queso Dip 1 cup of shredded monterey jack cheese 4 oz can of chopped green chili's dranied 1/4 cup Half & Half 2 Tbsp onion, firmly chopped 1 tsp cumin, ground 1/2 tsp salt heat all over low heat, stirring constantly until cheese is melted...Serve with tortilla chips. Makes 1 1/4 cups dip You can omit the chilies/spices and add your own, or add salsa to the cheese sauce mixture, substitute cheeses...etc. But that gives you a basic place to start. ---------- Post added at 06:17 PM ---------- Previous post was at 06:16 PM ---------- For Janet, you can add refried beans or black beans to make it a bean/queso dip. |
