I always have such a hard time getting back into meal planning routines after a trip. Even just a long weekend. I end up in denial and flying by the seat of my pants for a few days before I finally get my act together again. Sigh.
So we got home Monday night and had leftovers from the trip to eat for dinner Monday. Tuesday we had grilled brats/hot dogs, grilled okra, and roasted broccoli. All stuff I had bought before we left. Last night we had leftover pizza from the trip...now tonight my fridge is basically empty and I actually have to figure out something. My freezer is FULL--I desperately need to spend this month doing a freezer/pantry challenge--but I really need to plan ahead to thaw stuff.

Whole, yes. DH puts them on a pizza pan with some fat (butter or bacon grease) and salt. I've also roasted them at 450 if he's not grilling when we want to eat them. Learned this summer that the small pods are WAY better than the big ones, FYI.

Can I just say that oven-roasted green beans are my new favorite thing?!! Oh so yummy. We had some leftover from dinner last night and I ate them as a snack with a homemade lemony dill ranch dressing and it was soooo good. I have a few more green beans left so I think I will be oven-roasting in the near future just for some snack food for me. I roasted fresh green beans tossed with olive oil, salt, pepper, granulated garlic, granulated onion and gf soy sauce at 425 degrees for 30 mins stirring at the 15 min mark.
Tonight is brats, sauerkraut, oven fries, watermelon.
