I agree about rinsing. I swish the grain in water and rinse twice before cooking. I use a piece of paper towel held taut at the lip of the pot I am using, and drain the quinoa though the paper. After I've finished draining I shake off the extra grains from the paper. On a good day there is little to no waste.

Do you think quinoa could be used in recipes in place of couscous as a gluten free alternative? I miss couscous so much. Also has anyone tried it as a gf replacement in tabouli?

This is how I usually use quinoa. I make tabouli. Sometimes I will serve it slightly warm, and later eat the leftovers cold.

My next favourite way to eat couscous is as a breakfast porridge. I will cook it with raisins and sometimes add a drizzle of maple syrup before eating.

I haven't tried it as a couscous sub, but I bet it would be good. I use quinoa instead of macaroni, for mac and cheese. My kids love it.

I also make a one dish mexican quinoa that my family loves, even though they all "meh" over quinoa. Now that our home is mostly gluten free, we are using more quinoa.

What is tabouli? Recipe?

We have an amazing cold Mexican quinoa side dish I love. That’s my favorite but I’m loving the other ideas... mac and cheese

I am super excited to try it with mac n cheese. My dd loves mac n cheese and we already make it from scratch so just switching out the pasta should be easy.

I'd also like the cold Mexican quinoa side dish recipe, too, please.

---------- Post added at 12:04 PM ---------- Previous post was at 11:59 AM ----------

I probably don't make tabouli the traditional way and I haven't made it in a long time, but I like it with fresh tomatoes, cucumbers, red onion, basil, parsley, (could add mint, too, but I don't like it), with a lemon, olive oil, salt and pepper vinaigrette. I usually add feta because everything is better with feta.

ETA: I should add that tabouli is usually made with bulgar wheat.

My tabouli is similar to Charla's. I make a dressing with oil, fresh lemon juice, salt and pepper, and sometimes add freshly minced garlic. I don't measure, but make the dressing to taste. Then I add finely chopped parsley (sometimes mint), chopped tomatoes, cucumber bits, diced sweet peppers, and chickpeas.

I like Charla's addition of feta and might try this as more of a greek salad with the addition of red wine vinegar, sweet onions, oregano, and olives added, and omit the chickpeas and mint.

I made the Mexican quiona last night and I used Jodi's browning method. It was good! I didn't have cilantro or avocado, though. That would've made it much better.

This is the Quinoa Cowboy Caviar that I made a lot last summer. I realized it's almost identical to the Mexican Quinoa that Kristen posted. I never added the avocado because I have a few kids that don't like them.

I haven't tried these quinoa recipes, other than the cowboy caviar, but I'm hoping to try more now that I know about the browning method.

This is good too: https://damndelicious.net/2014/05/02...shroom-quinoa/

I've done it with white mushrooms, and a splash of red wine. I've also done it as a main dish with added italian sausage. My non-quinoa, non-mushroom loving kids inhaled this. My mushroom loving kid drooled through the meal.
