I just saw this recipe, haven't tried it yet, but I'm hoping to. Sweet Potato and Avocado Brownies Ingredients: 1/2 cup mashed avocado (about 1/2 an avocado) 1/2 cup cooked sweet potato 1/2 cup creamy nut butter (almond, cashew, tahini, etc) 1/2 cup chocolate chips 2 tablespoons maple syrup 1/4 cup coconut milk 3 tablespoons cacao powder Instructions: Preheat the oven to 325° F, and line a regular size loaf pan with parchment paper or grease it. Then blend all other ingredients except chocolate chips in a food processor or blender. Stir in the chocolate chips by hand and transfer the batter to the loaf pan. Level the batter in the pan, it will be thick. Bake for 20 minutes. Cool in the pan and slice. We also make banana "ice cream." Take overly ripe bananas, peel and freeze them. (Slice before freezing if you have time.) Break into chunks if not already sliced and place into food processor with a small amount of liquid. (I use milk, you can use coconut or almond milk. I've never used water but it might work.) Blend until creamy. Serve as is or sprinkle with chocolate chips and/or nuts. |

Water works just fine for banana ice cream. The less liquid you use obviously, the smoother it will be. Peanut butter is a nice addition.
We've made sweet potato brownies with purple sweet potatoes, they are very dense! Some of our old standbys are baked apples stuffed with raisins and coconut flakes, and chocolate date balls the kids call brownie bites. They are similar to larabars, you can omit the chocolate powder and use other ingredients with the date paste base. |
