"Stuffed" Bell Peppers. I say "stuffed" because instead of stuffing the peppers, I dice them up and mix them in with the rice mixture. The kids are more likely to actually eat the peppers that way.

My first time cooking (and eating) this soup and i will say its surprisingly tasty! Subbed Veg broth and used a blender instead of mixer.. Easy & Delicious!!

Wow that soup sounds so unique and I think I need to try it soon!!

We are having fish tacos with the most amazing taco sauce!!! It has capers and chipotle chili powder and cardamom and a bunch of other flavors...

We had simple taco bowls - taco seasoned ground beef, cheese, sour cream, torn corn tortillas for DH and me, rice for the boys. I usually do them with lettuce and tomato too but didn't have any today.
