Vegetarian Crockpot
I was about to revive an old thread I found, but I got a scary red message and decided to start a new thread instead.
DH and I all but stopped eating meat about five years ago, and I miss my crockpot!! I would love some great recipes for days we have late afternoon activities. I have two that we like, so I will post them here. Hope to get some new ideas, too! TIA |

Tofu Spaghetti
Tofu Spaghetti
1/4 c. oil 2 cloves garlic, minced 1 t. salt 1/2 t. dried basil (more to taste) 1/2 t. dried oregano 1/2 t. fennel seeds 1/4 t. dried thyme 1/4 t. ground pepper 1/2 c. chopped onion 1 35 oz. can tomatoes, cut up 1 12 oz. can tomato paste 1 lb. firm tofu, squeezed Combine first 11 ingredients in the crockpot in the morning and cook on low. Half hour before serving, drain and crumble the tofu and add to sauce. Cover and cook 30 minutes. Serve over spaghetti noodles (we use whole wheat). Top with parmesan or grated mozzarella if desired. I often add bell peppers, fresh tomatoes, mushrooms or parsley if I have them on hand. |

I highly recommend the cookbook Fresh From The Vegetarian Slow Cooker by Robin Robertson. I make something from it every week!

Thank you so much. It's hard to tell online if a cookbook is going to be good. Of course, they all sound good! I will look into it. Sounds like just what I need.

I really like that cookbook. Several of the recipes in there have made it into our permanent rotation!

That settles it. Dh will have to watch the kids for me sometime this weekend so I can go to B&N and look at it. . . and a few other books. . . and drink some coffee (all by myself!!).

If you have a good library, that's a great way to try out cookbooks too. That's the way I tried it
