Default How do you get all the servings in?

We have a huge issue with repetitive eating and not getting enough fruits/veggies in. My kids are like me and could eat the same thing for every meal and not get bored, but this leads to us eating a rotation of the same, say, 3 meals for lunches every.single.week.

I really want to work on getting more fresh fruits and veggies into our diet but I feel so entrenched in my groove that I don't really know how to go about this.
Here is a sample of a daily food diary.

Breakfast:
2 eggs, scrambled
1 piece of ww toast with "butter" and preserves

Snack:
String cheese

Lunch:
Cheese Quesadillas
Beans and sauce

Snack:
Yogurt

Dinner:
Chili
Grilled cheese


I know I can add in some fresh fruit like bananas, apples, oranges at meals, but how do I get in more veggies in a day?

ok...how about smoothies at breakfast? add any fresh fruit (banana, orange, strawberries, peaches, etc) and some greens...baby spinach is the mildest.

for lunch, snack and dinner: have cut up raw veggies out at every meal. mine love carrots, celery, broccoli, zuccini, cucumber, peppers, cherry tomatos. have dips too. plain yogurt or sour cream with a little onion powder, garlic powder and dried dill. hummus is good too. these are easy to make a big batch and eat off of all week.

at dinner, how about steamed veggies? add some butter, S&P and good to go. broccoli, squash, sweet potatos, sweet corn, carrots, green beans. even frozen peas, corn, green beans would be better than none. we eat a lot of roasted root veggies with pot roast or chicken, but more so in the winter.

stir fry is great...rice or other grain, whatever veggies you have on hand, couple eggs, some left over chicken (optional) and a little soy sauce.

baked potatoes or sweet potatos are easy to make a bunch of and keep in the fridge.

how about salads?

for breakfast...how about veggies in the eggs = omlet? mushrooms, onions, peppers are all good...chop small and cook first...they will hardly notice.

One easy way is to only snack on fruits/veggies. We eat a lot of apple w/ PB, for instance. We also like to snack on bananas, berries, etc.

Beyond that, I would try to incorporate fruits/veggies one meal at a time. I think breakfast is the easiest meal - we often have banana in oatmeal.

Deceptively Delicious or Sneaky Chef are great. I'm not into the "hiding" just boosting! I opt for full disclosure -- my kids think it's cool when they eat something like an omelet then I tell them it also has cauliflower and onion and garlic in it-- "No way, Mom--it just tastes like eggs & cheese!"
You're only putting in a couple Tbsps of veggies sometimes but I figure it certainly can't hurt! A lot less work than it seems and Deceptively Delicious is extremely user-friendly with clear instructions.
[I haven't read/used Sneaky Chef but I think it's more or less the same.]
